Now that you have sailed through the phase 1, here comes the challenging hcg diet recipes phase 2. You will be on this diet for 3 to 6 weeks depending on the amount of weight loss you desire.

This is a very low calorie diet phase and you have to be very careful not to exceed 500 calorie per day. When your menu becomes so narrow, then you might find it difficult to stick to the diet. Therefore let’s stretch the menu and bring in more varieties just within our stipulated calorie limit. The recipes that I am going to share are very easy to make at home and mostly requires baking, steaming or having raw in the form of salads. You should be well aware of the fact that no fatty substances can be allowed in 500 calorie diet. Hence all the recipes have been carefully tailor made to your needs without any oil or fats.

Hcg diet phase 2 recipes 1: Beef enchiladas

  • Beef, 3 ounces or 85 grams of beef (or chicken)
  • Water, 1 Tablespoon
  • Minced onions, 1 Tablespoon
  • Minced garlic, 1 clove
  • Diced Tomatoes, ½ a can
  • Basil, ½ teaspoon
  • Oregano, ½ teaspoon
  • Chili Powder, ½ teaspoon
  • Cumin, 1 teaspoon

Since the use of oil is prohibited, we shall use water instead, to sauté the onions and the garlic for about 2 to 3 minutes. Throw in the diced tomatoes and the rest of the spices. Let the mixture cook for 5 to 10 minutes. Once the paste is ready, add the meat. The beef or chicken needs to be cooked and then shredded beforehand. Cook the whole thing on low heat while it simmers for a few more minutes. Garnish with your favorite herbs and serve along with green salads.

Hcg diet phase 2 recipes 2: Shrimp cocktail

  • Shrimps with the shell, large or medium, 3.5 ounces or 100 grams
  • Lemon juice, 2 teaspoon
  • Lemon, ¼
  • Apple cider vinegar, 1 tablespoon
  • Tabasco sauce, ¼ tablespoon
  • Horseradish, ¼ tablespoon
  • Mustard powder, ¼ tablespoon
  • Tomato paste, 2 ounces or 60 grams
  • Salt and pepper to taste

Boil the shrimps till they are nicely done i.e. pink and opaque. While boiling the shrimps add the lemon juice. Then carefully devein the shrimps. Throw them into the refrigerator and let them cool for half an hour.  Next we will make the sauce for the cocktail. There is nothing much to do in this, just add all the remaining ingredients and give them a nice stir. Drip the sauce over the cooled shrimps and serve in a cocktail or wine glass. You can garnish it with parsley.

Hcg diet phase 2 recipes 3: Chili chicken

  • Diced Chicken breast, 3.5 ounces or 100 grams
  • Diced onions, 1/2 cup
  • Diced garlic, 1 clove
  • Water 1/2-1 cup
  • Tomato Sauce, 1/2 cup
  • Diced, 1 large Tomato,
  • Cumin, 1 teaspoon
  • Chili Powder, 1/2 teaspoon or according to taste,
  • Cilantro, 1/2 teaspoon
  • Salt and Pepper to taste

Take a medium size cooking ware such as a pot or saucepan. Pour water and let it heat up. We are going to use water to cook the onion, garlic. Then when the onion and garlic are sizzling add the chicken. Keep adding water so as not to dry up. Add the rest of the ingredients; cook till it has a thick consistency.
